Thanksgiving Scallops

Hey, there were only three of us – why roast a turkey?? And I’ll choose seafood, any day! I am spending a couple of days with sister and her spouse in northern Vermont; we eat well.

Menu: Cheese, apples and crackers to start; scallops on lemon cilantro rice, baked brussels sprouts, salad, pumpkin pie with maple reduction, chocolate black walnut pie, whipped cream for pies.

That was a few hours ago; I’m not hungry again yet!
